One of the most popular stories surrounding the creation of the coxinha reads like a fairy tale of Brazilian cuisine. The legend begins at the Morro Azul Farm, nestled in the countryside of São Paulo. Here, a son of Princess Isabel and Count D’Eu is said to have lived, a boy with a particular fondness for chicken drumsticks.
One fateful day, when the farm’s cook discovered that there weren’t enough drumsticks to satisfy the boy’s cravings, she devised an ingenious plan. She shredded the meat from other parts of the chicken, shaped it into the form of a drumstick, wrapped it in wheat flour dough, and then fried it to perfection. This culinary innovation was an instant hit and quickly became a favorite at the farm. Thus, the coxinha was born, almost by accident, but destined to become a staple of Brazilian street food.
